Tour Detail

BASIC FACTS:

We are a family farm covering 172 hectares (155 acres) divided in three sections: Santa Elena and two annexes (San Francisco and San Rafael).

Shade-grown coffee and bananas have been the main crops for nearly a century. Minor crops include coconuts, bamboo, lumber, sun, firewood, plantains and varied fruits.

We have a solar dryer that produces dehydrated bananas, a traditional Guatemalan delicacy. Also, visitors can purchase honey and roasted coffee from the farm.

The altitude is 2,300 feet (750 meters) and the climate is ideal, with year-around temperatures between 64 and 84 degrees Fahrenheit. The dry season is from December to April, and the rains are from May to November. The coffee harvest is from September to December.

 

HISTORY:

Since 1936, the farm has belonged to the Rivera family from Quetzaltenango. The third generation administers it now.

Because of low coffee prices in 2002-2003, the farm pursued more diversification including a dried fruit industry, rural hospitality, and agro-tourism.

The main farm house was restored in 2002 conserving its traditional style. It is now a center for rural tourism that offers lodging, gourmet meals and educational programs.

In 2007 the entire farm was declared a PRIVATE NATURE PRESERVE committed to conserve the biodiversity which is typical of shade-grown coffee.

 

PLANTATIONS:

Most of the farm contains shade-grown arabica coffee plantations. The main varieties are Catimor, Catuai, Caturra and Borbón.

There is also a plantation of robusta-type coffee that is processed totally separated from the arabica coffee.

Our coffee has been classified "Extra Prime Washed" during most recent years, and we are constantly improving its quality.


 

MILLING AND DRYING:

The coffee harvest begins normally in September and ends in January. More than 50 pickers gather the ripe coffee beans in baskets and we transport them to the mill to process them the same day.

Our traditional processing system has been perfected to produce a top quality coffee wich has been well-selected.

The ripe coffee beans are separated from their sorrounding cherry-type fruit and are then fermented, washed and dried using energy from water, sun, firewood and electricity.

 

SELLING:

Most of the coffee is sold as "parchment coffee", with beans still in their protectrive husks. Harvests have varied between 40,000 and 75,000 pounds (18-34,000Kg) per year of top-grade parchment coffee.

After processing, the parchment coffee is stored in wooden warehouses with constant temperature and low humidity until the buyers' trucks take it away.

We use part of the coffee to roast locally, consume at the farm, and sell to visitors and customers. It is sold ground or in whole beans in sealed bags under the name "Café Aroma de Guatemala - Our Best Shade-Grown Coffee".

80% refund if cancel within 6 days before tour starts.

50% refund if cancel within 5 days before tour starts.

NO refund if cancel within 3 days before tour starts.
